Today I am coming to you with one of my mom’s best and easiest recipe. I have personally tasted all kinds of falafel. I tried the many versions of falafel that are made by various Mediterranean cuisines. I tried them in Egypt, in Greek and Palestinian restaurants, you name it, I tried it. I even tried the store bought mix from Trader Joe’s and the frozen falafel patties from the Egyptian grocery stores and they were all okay for me. But nothing compares to my mom’s falafel recipe. Don’t only take my word for it, but trust everyone who has tried her falafel and said that they were the absolute best!
So, I got to spend the day with my mom and put this recipe together for you to hopefully give it a try and enjoy with your loved ones. The recipe is really simple. Below you’ll find the ingredients which consist of split fava beans (which you can find here), yellow onions, cilantro, parsley, garlic and scallions. I would recommend using a big food processor to make your life easy. This batch makes about 5 ziplock bags. So if you want, you can split the ingredients in half to make a smaller batch. I personally like to make a big batch at once and freeze the rest for easy meals. I can easily pull it out before I leave for work in the morning and by the time I come back it’ll be defrosted and I can add my seasonings and fry it.
